Nutritional characterization of value-added health mix using germinated barley

The present study was designed to explore the nutraceutical potential of orange peel, malted barley, and fenugreek-based value-added/functional health mix. Purposely, peel fenugreek powder have been combined germinated barley flour with different ratio . composite subjected a nutritional antioxidant assay. analysis revealed that are good sources protein, fiber, fat, potassium (K), calcium (Ca). Afterward, mix-based functional drink developed physicochemical, functional, sensory evaluation. TPC (Total phenolic content), DPPH (1, 1-diphenyl-2-picrylhydrazyl) activity, FRAP (ferric reducing power) found be increased addition at various concentrations. (30% flour, 60% 10% flour) is among other treatments. Sensory scores formulated value-added drinks decreased progression storage time.
